FIELD: molecular biology and food industry.
SUBSTANCE: present invention relates to the field of molecular biology and the food industry, in particular to new peptides exhibiting an increased enzymatic activity of beta-galactosidase, as well as to improved methods for reducing the lactose content in compositions and methods for producing dairy products based on them. The present inventors have identified beta-galactosidases having previously undescribed properties, in particular these beta-galactosidases have been shown to be highly stable with relatively high activity over very wide temperature as well as pH ranges.
EFFECT: present invention allows the use of beta-galactosidases at certain pH and temperature values that were not previously known to be possible, and also allows the use of the same particular enzyme in several different applications with high industrial demand.
