SUBSTANCE: invention relates to the field of biotechnology and is a method for changing the glycosylation of steviol glycoside, including: a) exposing the first steviol glycoside to beta–glucosidase from the Pichia species for a period of time sufficient to form a second steviol glycoside by removing at least one glucosyl group from the said first steviol glycoside; and b) collecting the said second steviol glycoside.

EFFECT: invention makes it possible to change the glycosylation of the steviol glycoside with a high degree of efficiency.
