FIELD: dairy industry.
SUBSTANCE: method for obtaining a demineralized milk protein composition is carried out as follows. Milk protein composition (1, 1a, 1b) is produced (2, 3, 5, 7, 9, 10, 12), and ultrafiltration is carried out (15). Next, nanofiltration (17) of ultrafiltration retentate (16) and electrodialysis (19) of nanofiltration retentate (18) are carried out. The method does not include any stage including passing through ion-exchange resins. The demineralized milk protein composition has a ratio of calcium and phosphorus content, which is more than 0.65. The use of a demineralized milk protein composition as an ingredient for the production of baby milk is also proposed.
EFFECT: group of inventions provides a product that has a ratio of calcium and phosphorus close to breast milk, the resulting product has a degree of demineralization exceeding 90%.
