FIELD: food industry.
SUBSTANCE: invention relates to food industry, to methods of producing a biologically active additive of vegetable origin based on dry cabbage juice. Method of biologically active additive production is characterized by the fact that cabbages are peeled, cabbages are milled, crushed twice, milled cabbages are squeezed twice to produce cabbage juice and cabbage cake. Then squeezed cabbage juice is collected, cabbage juice is filtered, lactose is added to purified cabbage juice, purified cabbage juice is heated and stirred. Then cabbage juice saturated with lactose is filtered, purified saturated cabbage juice is dried by convection in a spray drier with output of dry cabbage juice.
EFFECT: invention allows to optimize the process of obtaining biologically active additives from cabbage juice with preservation of vitamin and mineral composition and to obtain a product with a wide range of preventive action.
