SUBSTANCE: invention relates to the field of computer engineering, namely to a method for assessing the moisture content of distillery, which includes its successive movement in a drum dryer and providing non-contact indirect measurement of moisture content in real time by normalized signals received from a plurality of sensors, which are supplied to the inputs of the trained neural network, from the output of which the moisture content of the distillery dregs is obtained during its drying, wherein training of the neural network is organized by reference measures in an adaptive range with a fixed accuracy of the following sensors of the drum drying installation: stillage temperature at the outlet, heat carrier pressure, air temperature inside the plant, power of exhaust fans, oxygen content in the air inside the plant, vapour temperature, electric motor load.

EFFECT: obtaining real-time evaluation of distillery dregs moisture during drying and ensuring preset quality of the manufactured product.
