FIELD: food industry.
SUBSTANCE: invention relates to the food industry and can be used at enterprises of the bakery, confectionery industry, public catering. Proposed is a method for producing dry biscuits, wherein softened butter is mixed with camelina oil and whipped with sugar until complete dissolution of sugar grains, egg melange and drinking milk, drinking soda, are added, then a mixture of high-grade wheat flour, rice flour, and sesame flour is introduced and the dough is kneaded for 1 to 2 minutes, then dough pieces are shaped from the kneaded dough, being stamped from a layer of dough with a thickness of 6 to 7 mm, and placed on the sheets, greased with egg melange, sprinkled with sesame seeds and baked at a temperature of 200 to 220°C for 10 to 12 minutes, wherein the dough for biscuits is prepared at the following selection of the ratio of the components, kg per 1,000 kg of finished products: high-grade wheat flour 254.5 to 310.2; rice flour 140.1 to 201.9; sesame flour 95.0 to 126.0; drinking milk 96.3 to 108.2; egg melange 25.0 to 31.0; sugar 158.2 to 205.8; butter 67.0 to 79,0; camelina oil 52.0 to 62.0; sesame seeds 52.5 to 59.6; drinking soda 2.2 to 3.7.
EFFECT: invention provides a possibility of obtaining a product characterised by improved organoleptic characteristics, increased nutritional value, balanced fatty acid composition, allowing for recommendation thereof for inclusion in the diet of school-age children, pregnant and lactating women, people maintaining a healthy lifestyle, as well as for preventive nutrition, and also provides a possibility of ensuring a preventive direction of the products, expanding the range of flour-based confectionery products.
