SUBSTANCE: present invention relates to a method of producing organic peroxide online and to a system for online production of organic peroxide. Disclosed method includes the following steps: introducing an organic solution and a peroxide solution into a mixing tank to form a mixture; circulating the mixture over the fixed catalytic bed to form a solution containing organic peroxide; returning said solution containing organic peroxide to mixing tank; measuring the concentration of the organic peroxide in the mixing tank and removing at least a portion of the solution containing the organic peroxide when a given concentration value is reached or when it is exceeded, wherein the organic solution contains water and an organic acid having from 1 to 8 carbon atoms.

EFFECT: proposed group of inventions enables to obtain organic peroxide of the desired concentration for direct use on poultry and beef carcasses and eliminate the need to produce concentrated solutions of organic peroxides.
