SUBSTANCE: invention relates to the meat processing industry and can be used by meat processing plants for the production of boiled minced meat products, namely, sausage breads. The method for the production of sausage bread is characterized by the fact that it includes the preparation of minced meat from 38.2 kg of lean trimmed pork, 33.4 kg of trimmed beef, 23.4 kg of back fat, 5 kg of wheat bran, 2.5 kg of table salt, 110 g of sugar, 85 g ground black pepper, 55 g ground nutmeg and 5 g sodium nitrite. Further, molding, baking, release of molds, cooling, quality control, packaging and labeling of the finished product are carried out.

EFFECT: invention allows expanding the assortment of sausage bread, increasing the yield of the finished product, and also increasing its shelf life. At the same time, according to the results of organoleptic and physico-chemical studies, sausage bread with 5% wheat bran fully meets the requirements of regulatory and technical documentation.
