FIELD: meat industry.
SUBSTANCE: invention relates to meat industry and may be used for production of minced meat products, in particular, sausage breads. Method involves grinding turkey meat and mechanically separated meat of birds, salting, maturation, chopping recipe components with addition of ice, egg melange, powdered girasol and black ground pepper, baking molded product. Quantitative ratio of mince components is selected. At that, 69 pts. wt. of obtained mince is added during chopping 3 pts. wt. fermented rye malt and 3 pts. wt. of dried plums. Forming is carried out layer by layer with two types of mince in consecutive rows with formation of checkerboard pattern with cross section of ready sausage bread.
EFFECT: higher output of the ready product as well as wider range of sausage bread with high consumer characteristics.
