SUBSTANCE: invention relates to the food industry. A method for the production of a drink from fruit and berry raw materials is proposed, which involves the use of fresh, or frozen, or dried fruit and berry raw materials and consists in the simultaneous grinding, heating and mixing of raw materials with water as an extractant in a rotary-type dispersing apparatus, accompanied by diffusion of the extractant and particles crushed raw materials, while first the water is pre-purified using natural zeolite filters to obtain purified water, before processing, fresh fruit and berry raw materials are inspected and cleaned, frozen fruit and berry raw materials are not thawed, and dried fruit and berry raw materials are pre-soaked in purified water, then the fruit and berry raw materials are loaded into the tank of the dispersing apparatus and poured with purified water in a ratio of 1:5-1:1 mass fraction of raw materials to water, and grinding and mixing of fruit and berry raw materials with purified water is carried out with a gradual increase in the speed of the electric motor of the dispersing apparatus from 70 to 95 s-1 for 20-60 minutes until the mixture reaches a temperature of 75-85°C, after which filtration is performed with a sieve with a mesh of 0.3-0.5 mm, cooling to 30-35°C and aseptic bottling into the container of the drink. In this case, after filling into containers, the drink is subjected to further freezing to minus 12-15°C to obtain a concentrated drink.

EFFECT: invention provides obtaining beverages from fruit and berry raw materials, reduces the time of their preparation, improves their consumer properties, preserves vitamins and fills products with useful micro- and macroelements.
