FIELD: food industry.

SUBSTANCE: method provides for the operations of defrosting, grinding and extraction of frozen fruit and berry raw materials in the apparatus in the low-frequency mechanical oscillation field by means of a vibration plate perforated with openings with the diameter of 2.5 mm with the free section share of 16.5%. The vibration plate is installed with the possibility to perform reciprocal movements in the vertical plane with the frequency of 9.6…10 Hz and the amplitude of 8…10 mm. The extractant is represented by water at the temperature of 18…20°C. The frozen raw materials and water are loaded into the working volume of the apparatus, where the three operations are performed.

EFFECT: invention allows to intensify the process, to reduce the time and energy consumption for processing raw materials, and to increase the content of vitamin C in the extract.
