FIELD: food industry.
SUBSTANCE: invention relates to technology of fruit raw material processing and may be used in food industry and other branches of industry. The method envisages a thawing procedure, frozen fruit raw material extraction and milling in the extractor in low-frequency mechanical oscillation field with the help of a vibration tray with 2.5 mm diametre holes. The vibration tray is installed so that to enable reciprocal movement within the vertical plane with a 600 min-1 frequency and a 14 mm amplitude. Extraction is performed by a water-alcohol solution with bulk concentration of spirit 40%. The frozen raw material, water and spirit are put into the extractor in the specified sequence.
EFFECT: invention allows to provide for process intensification, to increase time- and energy - efficiency of raw material processing, to increase quality of the finished product and its storage life.
