FIELD: food industry.
SUBSTANCE: invention relates to the food industry. A method for making a vegetable drink, including: mixing in a dispersant 2-5 m.pts. hazelnut paste, 2-5 m.pts. hazelnuts and 2-7 m.pts. rice groats with 90 m.pts. water having a temperature of 60°C to obtain a working suspension; mixing the working suspension with amylase, taken in an amount equal to 10-4 by weight of the said suspension, for 10-20 minutes while maintaining the temperature of the mixture at 65°C; mixing the working suspension with glucosidase, taken in an amount equal to 10-5 by weight of the said suspension, for 1-2 hours while maintaining the temperature of the mixture at 65°C; decanting the resulting mixture in a decanter; heating the decanted mixture to a temperature of 95°C with keeping it in a heated state for 1 min and adding 0.38 m.pts. to the heated decanted mixture. oils, 0.2 m.pts. calcium carbonate, 0.12 m.pts. hazelnut flavor, 0.1 m.pts. sea salt, 0.1 m.pts. carrageenan and 0.06 m.pts. vitamin premix.
EFFECT: invention makes it possible to improve the organoleptic properties of the resulting vegetable drink, in particular due to the unique milky taste of the drink with a nutty aftertaste, the light consistency of the drink, the smooth drinking structure of the drink without flouriness and the pleasant sweetness of the drink.
