FIELD: food industry.
SUBSTANCE: group of inventions relates to a solid broth pill, a method for production thereof and use thereof for preparing a food product. Solid broth tablet contains from 40 to 80 % of crystalline ingredients (by weight of the composition), from 0.5 to 20 % of flavor additives (by weight of the composition), from 0.5 to 35 % of amorphous ingredients (by weight of composition), from 5 to 20 % of beef fat (by weight of composition). Beef fat has total content of saturated fat from 54 to 72 wt % (with respect to total weight of fats), wherein beef fat contains from 26.5 to 31 wt % (in terms of total weight of fats) C18:0 and from 25.5 to 33 wt % (with respect to total weight of fats) C16:0. Method comprises (a) mixing crystalline and amorphous ingredients and flavoring additives, (b) adding beef tallow to the mixture obtained at step (a), c) additional mixing of all ingredients from steps a) and b), d) optionally storage of mixture, e) pressing of solid broth tablet, f) packing of solid broth tablet.
EFFECT: obtaining a solid broth tablet with high crumbling capacity, extended storage life and preservation of organoleptic properties.
