FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely, to a method for producing a stock tablet or a stock cube. The method for producing a stock tablet or a stock cube including from 5 to 35% hygroscopic amorphous ingredients by weight of the composition, from 30 to 80% crystalline ingredients by weight of the composition, from 0.5 to 50% non-hygroscopic amorphous ingredients by weight of the composition, and from 5 to 20% fat by weight of the composition, includes: a) mixing all the ingredients, b) optionally storing the mixture, c) pressing a stock tablet or a stock cube, d) packaging the stock tablet or stock cube. The hygroscopic amorphous ingredients are encapsulated with fat or at least part of fat, wherein the content of fat in the encapsulated hygroscopic amorphous ingredients ranges from 22 to 80%, wherein the encapsulated hygroscopic amorphous ingredient is not presented in the granular form, and wherein the encapsulated hygroscopic amorphous ingredient does not include starch.
EFFECT: stock cube or tablet retains the hardness required for packaging and simultaneously the crumbling properties in accordance with consumer preferences during storage.
