FIELD: food industry.
SUBSTANCE: method for the production of broth powder is proposed, including following stages: the formation of a mixture containing from 40 to 78 wt.% (dry weight percent of the mixture) of a lipid composition with solid fat content (SFC) at 20°C of less than 12 wt.%, from 22 to 60 wt.% (dry weight percent of the mixture) of fiber characterized by a hydration degree from 15 to 500 cP/min, and water (water is present in a mass ratio from 1:2.5 to 1:30); drying of the resulting mixture to obtain lipid fiber powder; optional grinding of lipid fiber powder after the drying stage; mixing of from 30 to 80 wt.% of crystal ingredients (by weight of broth powder), from 2 to 35 wt.% of amorphous ingredients (by weight of broth powder), from 0.5 to 20 wt.% of flavoring additives (by weight of broth powder) and from 4 to 30 wt.% of lipid fiber powder (by weight of broth powder) to obtain broth powder.
EFFECT: invention provides for the production of broth powder with required properties.
