SUBSTANCE: invention relates to fat and oil industry. Powdered beef fat with total saturated fat content between 54 and 72 wt.% (per total fat weight) wherein the amount C18:0 falls within the range between 23.5 and 36% (per total fat weight). Method for producing powdered beef fat includes: a) melting the fat; b) spraying the melted fat to produce fat droplets; curing the fat droplets by contact with a cooling agent selected from cold air, liquid nitrogen or liquefied carbon dioxide.
EFFECT: invention allows avoiding the use of palm fat; producing fat with good fluidity (fluidity coefficient (FC) above 2 at 23°C) and no rancidity.
