FIELD: biotechnology.
SUBSTANCE: invention relates to biotechnology. A method for obtaining lactic acid from curd whey is proposed, including the cultivation of Lactobacillus casei RNCIM B-5726 on curd whey, previously freed from whey proteins by adding sodium hydroxide solution, pasteurization and centrifugation, sterilized at 111°C at pH 6.7 for 15 min; with the addition to the mass of the mixture of 5% yeast autolysate and 1% solution of trace elements according to Fedorov. The pH of the medium is controlled at 6.7 with a 20% solution of calcium hydroxide. After 72 hours of fermentation, an additional 5% yeast autolysate is added; after 120 hours, the culture medium containing calcium lactate is centrifuged, the centrifuge is sent for purification of lactic acid.
EFFECT: invention provides an increase in the yield of the target product using cheap raw materials - curd whey, which is a waste product of the dairy industry.
