SUBSTANCE: invention is a strain of yeast Saccharomyces cerevisiae U3-55 VKPM Y-5080, which has thermotolerant properties, for the production of rectified ethyl alcohol from Classic food raw materials, bred from industrial alcohol yeast Saccharomyces cerevisiae, as a result of prolonged exposure to ultrasound, followed by the addition into the treated medium of yeast extract DECH, obtained from yeast cells by destroying their integrity with ultrasound. The vibration frequency of the ultrasound used in this method is 22 kHz, the vibration intensity is 1.0 W/cm2. The strain was identified and deposited in the VKPM Bioresource Center of the National Research Center "Kurchatov Institute" on October 6, 2022. VKPM registration number: Y-5080.
EFFECT: strain makes it possible to increase the yield and quality of rectified alcohol from starch-containing raw materials at elevated fermentation temperatures.
