FIELD: biotechnology.
SUBSTANCE: invention is related to a method for obtaining fish collagen hydrolyzate, which can be used in food, cosmetic, medical and other industries for obtaining medical and cosmetic preparations, as well as some food products. The method for obtaining low molecular weight collagen from fish skins includes the preparation of fish raw materials by cleaning and washing with cold running water. After washing, fish raw materials are treated with 3-5% hydrogen peroxide in the ratio of raw materials:hydrogen peroxide 1:1 and neutrase enzyme. Then the skins are washed twice, crushed in a colloid mill and extraction is carried out in water, the solution is filtered, food acid is added to the filtrate, after the formation of a precipitate, it is separated on a separator, the homogenized product is washed with cold water and dissolved in water in a ratio of 1:1, the resulting solution is subjected to stepwise enzymatic hydrolysis at a temperature of 38-40°C with the use of enzyme preparations: protamex at the rate of 1.3 U/g of raw materials, pH = 8 for 2.5 hours and pepsin at the rate of 1.2 U/g of raw materials, pH = 4.5 for 2.5 hours, after each stage of hydrolysis, the enzyme is inactivated, the resulting enzyme lysate is separated into fractions in an ultrafiltration unit with cassettes of 300 kDa, the fraction below 300 kDa is freeze-dried.
EFFECT: proposed method for producing fish collagen hydrolyzate provides for obtaining collagen hydrolyzate with a maximum yield of up to 97.7% with a molecular weight value of 15 to 300 kDa.
