FIELD: biotechnology.
SUBSTANCE: invention relates to the field of biotechnology, food and processing industry and can be used to produce soft drinks with biological activity. The method for obtaining the drink involves the use of grape pomace extract as a sugar-containing liquid. In this case, the extract was obtained by boiling a mixture of grape pomace and distilled water in a ratio of 1:6 in a water bath at a temperature of 60-65°C for 120-125 minutes, followed by filtration until the impurities of the sediment disappear and cooling to a temperature of 22-25°C. 5-6% glucose and 5-6% fructose are added to the resulting extract and the acidity of the finished extract is brought to 6.0-7.0 using 0.1 M of HCl and 0.1 M of NaOH. Cultures of yeast Zygosaccharomyces kombuchaensis and bacteria Gluconacetobacter xylinus are introduced in a ratio of 1:1 and fermented at a temperature of 25-30°C for 24-48 hours until a pH of 3.0-3.5 is reached.
EFFECT: invention makes it possible to obtain a drink with biological activity, with improved taste qualities.
