SUBSTANCE: inventions group relates to the food industry, namely to methods and devices for drying foodstuffs. The method for absorption drying of food products includes the stages at which the product to be dried is placed in the tunnel of the drying chamber on mesh trays, the calcium chloride solution is taken from the absorber tray by means of the absorber recirculation pump, it is pumped through the heat exchanger-cooler and the absorber nozzle is irrigated, the resulting calcium chloride solution through the second air heater, after which the solution is fed into the solution heat exchanger, where the weak solution coming from the absorber is heated, the water vapour released when the solution is heated in the generator is transferred to the condenser tank, where they condense on the fins of the condenser radiator, the resulting heat the coolant is removed, which circulates inside the condenser radiator by means of a condenser pump, which pumps it to the first air heating coil, in which the coolant is cooled by air from the fan and cooled is returned to the condenser. The device provides for the implementation of the method for absorption drying.

EFFECT: improvement in products of organoleptic indicators close to products subjected to freeze-drying, while simplifying the process of processing food products.
