FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to methods for the production of products of specialized orientation. A method for the preparation of pate is proposed, which includes preparation of liver and flour components to obtain a liver-flour composition, addition of spicy recipe components to it, preparation, based on them, of homogenous pate mass of smearing consistency, and its packing in a container with subsequent heat treatment. In this case, as a liver component, preliminary cooked and ground chicken liver is used, and, as a flour component, non-defatted flour of roasted pine nut kernels is used, which are mixed by hydration to obtain a liver-flour composition and then ground together, at a weight ratio of cooked chicken liver : hydrated non-defatted flour of roasted pine nut kernels of 70:30, with simultaneous addition of an alcohol extract of Chinese lemongrass seeds in amount of 1.0% to the total mass of the liver-flour composition.
EFFECT: invention allows for obtainment of pate with antioxidant-adaptogen properties for use in nutrition of a human being in extreme environmental conditions, with an increase in taste advantages of pate, with impart to it of a specialized orientation.
