SUBSTANCE: method for obtaining a homogeneous apple paste from small-fruited apples, including washing the fruits, grinding, obtaining an apple mass, processing with microwave energy. At the same time, the obtained apple mass is fed for processing with microwave energy at a power of 1,000 W for 5.0 min in one stage, then the apple mass is sent to a homogenizer-dispersant, the output of a homogeneous apple paste with a solids content of 25.4%, the content of pectin substances in the paste is 5.35%, paste pH is 3.3, the resulting homogeneous apple paste is packed and sealed.

EFFECT: invention makes it possible to obtain a homogeneous apple paste from fruits of small-fruited apple trees with a high content of solids, as well as to reduce the time for obtaining the paste and preserve vitamins.
