FIELD: biotechnology.
SUBSTANCE: method for the production of a bacterial concentrate (options) is proposed. The method includes preparation of a nutrient medium based on clarified milk whey with addition of growth components, sterilization, cooling, introduction of inoculum, cell buildup, centrifugation, mixing with a protective medium, pouring, freezing, drying. In this case, clarified milk whey is pre-hydrolyzed with β-galactosidase enzyme preparation in amount of 1.5-2 U/cm3 of whey at 37±1°C for 1.5-2 h, or 5 g/dm3 of glucose is added, and Lactobacillus sakei RNCIM B-8896 lactic acid bacteria in amount of 3-5% are used as inoculum.
EFFECT: inventions allow for production of a bacterial concentrate of Lactobacillus sakei bacteria resistant to sodium chloride and having increased biochemical activity.
