FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Vegetable marmalade includes isomalt, molasses, herbal supplement, agar, citric acid. Wherein, as a herbal supplement, nutmeg pumpkin fruit puree is used. The starting components are taken in the following ratio, wt. %: isomalt - 39.3-40.0; molasses - 27.4-27.9; puree from fruits of nutmeg pumpkin - 30.2-31.4; agar - 1.5; citric acid - 0.4.
EFFECT: invention allows increasing the nutritional value of the target product and enriching it with a functional food ingredient - β-carotene, as well as expanding the range of products.
