FIELD: oil and fat industry.

SUBSTANCE: method for producing an extract of phytosterols and stanols from tall pitch, comprising the following steps: a) providing the presence of tall pitch; b) saponifying tall pitch to produce saponified tall pitch by adding a base selected from one or more of NaOH, KOH and CsOH to the tall pitch; c) extracting the saponified tall pitch using one or more non-polar aromatic solvents to obtain a solution containing a mixture of neutral substances; d) performing a distillation of a mixture of neutral substances to obtain a distillate fraction and a residual fraction; e) dissolving the distillate fraction in the solvent mixture to obtain a dissolved distillate fraction. It also contains a crystallization step (f), which is carried out in relation to the dissolved fraction of the distillate under crystallization conditions, to extract the mother liquor and the crystallized fraction, while the crystallized fraction forms an extract of phytosterols and stanols, and the solvent mixture used in the implementation of step (e), contains from 10 to 60 % by weight of one or more non-polar solvents, based on the total weight of the solvent mixture; 23 to 40 % by weight of one or more solvents having a ketone component, based on the total weight of the solvent mixture; from 2 to 20 % by weight of one or more monohydric alcohols, based on the total weight of the solvent mixture; and 0.5 to 2.5 % by weight water, based on the total weight of the solvent mixture.

EFFECT: extract of phytosterols and stanols, obtained from tall pitch by the above method, while it contains at least 65% (by weight) α-sitosterol, based on the total weight of the extract of phytosterols and stanols, and less than 0.01% (by weight), based on the total weight of the extract of phytosterols and stanols, each of the following components: oxysterols, α-sitosterol and betulin, the content of which is determined in the process of gas chromatography using a flame ionization detector as an analyser.
