FIELD: food industry.
SUBSTANCE: proposed is a composition of food colouring, containing a monoacylated anthocyanin compound extracted from red cabbage, with a structure of the Compound I and a metal ion. The composition of food colouring therein constitutes a solution with a pH from 6.0 to 8.0. Preferably, said composition of food colouring has a colour difference value, represented in the CIELAB L*a*b* colour space, of less than 17 compared to an aqueous solution of 50 ppm to 100 ppm FD&C Blue No. 1. Also proposed is a confectionery food product containing said composition of food colouring.

EFFECT: invention is aimed at providing colour characteristics of the colouring similar to those provided by the FD&C Blue No. 1 artificial blue colouring.
