FIELD: food industry.
SUBSTANCE: invention can be used in public catering establishments or in vending machines for the sale of ready-made food to obtain ready-to-eat food. A method for preparing a portion of a food product dish at public catering establishments is proposed, which includes placing a raw or pre-prepared food product in a metal tray having overall dimensions, namely, length x, width x, depth - no more than 200 mm x 250 mm x 50 mm, complete sealing of this tray by means of an individual polymer film, wherein the tray cavity is filled with an inert gas or a modified gas environment, exposure of the tray with the food product in a thermal cabinet at a temperature of 51 to 85°C for 1 hour to 7 days, removal of the specified polymer film and frying the contents of the tray for 20 seconds to 2 minutes by irradiating with 1000 W halogen lamps immediately before use. In this case, the metal tray is sealed with an individual polymer film, which is removed manually or automatically before the roasting stage.
EFFECT: easy automation of delivery of finished food to the buyer and short time between the buyer's payment for food and the receipt of the finished portion of food by him at high taste qualities of the product.
