FIELD: food industry.
SUBSTANCE: invention can be used in production of soft drinks based on vegetable raw materials. A method for obtaining a non-alcoholic drink from vegetable raw materials is proposed, providing for simultaneous grinding, homogenization and pasteurization of the mixture, a mixture of pine nut kernel and cake with a fat:protein ratio of 1.03-1.07:1.0 is used as vegetable raw materials, and grinding, homogenization and pasteurization of the mixture with the ratio of the mixture of the kernel and cake of pine nuts:water being 1:7-1:9 is carried out simultaneously in a rotary pulsation device at 2900 rpm until the temperature of the product reaches 65°C with an exposure time of 30 minutes, or until the temperature of the product reaches 75°C with an exposure of 2 minutes, packaging and further cooling to 4±2°C.
EFFECT: expansion of the range of non-alcoholic beverages based on vegetable raw materials, which have a high nutritional value and good organoleptic characteristics, the drink is characterized by a pronounced nutty taste with a creamy aftertaste, a pleasant smell, a creamy colour and a liquid consistency with the inclusion of dietary fibres.
