FIELD: food industry. SUBSTANCE: kernels of cedar nuts are ground and extracted simultaneously, both processes are carried out in water, ratio water: kernels of cedar nuts being 1:9-8:1. Grinding takes place till size of particles is not more 10-3 m. Homogenization is carried out simultaneously with heat treatment within 0.25-20 min at 65-80 C and at pressure not lower than 5 MPa. EFFECT: improves efficiency of the method.
