SUBSTANCE: whipped dessert chocolate products made from raw materials of plant origin, which are stored frozen. A whipped frozen chocolate dessert based on raw materials of plant origin is proposed, which is made from sugar syrup with a mass fraction of sucrose of 66%, cocoa mass, dry glucose syrup, chicory vegetable fibers, crystalline glucose, cocoa powder, thickener, salt and water with the following content of the initial components, wt.%: sugar syrup with a mass fraction of sucrose 66% - 16.7; cocoa mass - 11; dry glucose syrup - 6; vegetable fibers of chicory - 5; crystalline glucose - 4.5; cocoa powder - 3.9; thickener - 0.4; salt - 0.4; water - the rest.
EFFECT: creation of a dessert made from raw materials of plant origin and containing no components unfavorable to health that cause painful reactions, while the dessert is stable during storage, has an attractive appearance and a characteristic pleasant taste aroma.
