SUBSTANCE: method for manufacturing an ingredient is described, including production by mixing a basic liquid composition containing micellar caseins A1, whey proteins B1, and denatured whey proteins C1 in liquid form, wherein whey proteins B1 differ from the denatured whey proteins C1, pressure application stage of at least 50 bar to the mixture obtained in the first stage resulting in an ingredient characterized by certain parameters. Also described is the ingredient itself, obtained by this method, its use, and the dairy product containing it.
EFFECT: invention makes it possible to obtain products with improved organoleptic and functional properties.
