SUBSTANCE: means of heat treatment of moisture-containing products, used in the food industry or agriculture for drying vegetables, fruits, mushrooms, medicinal herbs and other products. The dryer cabinet contains a housing with a drying chamber, in which horizontal rows of removable all-metal trays filled with moisture-containing products are tightly installed on rails between a sealed door and a rear wall. There are air supply holes and air outlet holes with a diameter of d located between horizontal rows of removable all-metal trays, an air dryer, a blower, an air heater, a heated air temperature sensor, a heated air pressure sensor. The low pressure manifold communicates with an exhaust air duct equipped with an exhaust fan, a cold air temperature sensor, a cold air pressure sensor. Moreover, in each horizontal row, two or more removable all-metal trays of height h are tightly installed to each other. Horizontal rows of removable all-metal trays are located along the height of the drying chamber with a pitch H=h+(1…N)⋅d. For air turbulence, each subsequent removable all-metal tray of the horizontal row protrudes above the previous removable all-metal tray to a height (0.2…1.0)⋅h.

EFFECT: increasing the uniformity of drying of moisture-containing products due to the turbulence of the air flow around them, which leads to the equalization of the temperature and humidity of the air flow in the direction of its movement.
