FIELD: microbiology; biotechnology.
SUBSTANCE: invention is related to production of enzymes and concerns a new strain of bacteria used for the synthesis of xanthanolytic enzymes. Cohnella sp. strain 56 VKM B-3672D can use xanthan as the only carbon source when growing on solid and liquid media, i.e. can be used directly to degrade xanthan, without the addition of other sugars or oligosaccharides.
EFFECT: invention makes it possible to expand the range of strains of microorganisms capable of destroying xanthan gum.
