SUBSTANCE: invention is a biocatalyst based on a symbiotic mixture of bacteria, the cells of which are immobilized in polyvinyl alcohol cryogel, identified as a result of metagenomic analysis of: Paenibacillus spp., Cellulosimicrobium cellulans. The result of metagenomic reads was deposited in the Sequence Read Archive database under BioProject number PRJNA849974. The claimed biocatalyst retains specific xanthanase activity for a long time (at least 40 cycles of 36–38 hours). The total duration of effective use reaches at least 1,440 hours. The xanthanase activity of the multienzyme complex is 19.6 units/g at the end of each cycle.
EFFECT: obtaining biocatalyst for the destruction of xanthan based on immobilized cells of a symbiotic mixture of bacteria.
