FIELD: food industry.
SUBSTANCE: proposed method for producing a microencapsulated product for introduction into a beverage which forms a clear solution in water involves microencapsulating an encapsulated mixture capable of dissolving in water in an encapsulating substance. Moreover, the encapsulating substance contains hydrocolloid gum, dextrin or a combination thereof, and the encapsulated mixture contains one or more amino acids. The encapsulated mixture contains from 40% to 90% of the total amino acids based on the weight of the encapsulated mixture and the encapsulated mixture contains from 2% to 25% soluble corn fibre based on the weight of the encapsulated mixture. Moreover, the mass ratio of the encapsulated mixture and the encapsulating substance is from 20:1 to 1:1. Moreover, the microencapsulation stage is carried out by spray drying. A microencapsulated product for introduction into a beverage is also proposed.
EFFECT: invention makes it possible to combine hydrophilic and hydrophobic materials in a single powder, which can easily disperse and dissolve to form a transparent solution.
