FIELD: food industry.
SUBSTANCE: disclosed granular coloring agent for a food product contains a homogeneous mixture of 0.1 wt % to 40 wt % pigment-protein complex and 60 wt % to 99.9 wt % water-soluble liquid binding agent. Binding agent contains one or more of simple sugar in liquid form, corn syrup, honey, mizuame, molasses, maple syrup, agave, fructooligosaccharides, raw rice syrup and invert syrup. Granular dye is characterized by dissolution rate of more than 0.6 grams per minute to less than 2 grams per minute in water, characterized by initial temperature of 95 °C to 100 °C. Also disclosed are a dry powder composition for producing a gelatine product and a method for production thereof.
EFFECT: invention is aimed at protection of pigment-protein complex of dye from destruction and preservation of dye initial color in water with initial temperature of 95 °C to 100 °C.
