SUBSTANCE: production of biscuits with preventive properties. The method for preparing biscuits includes kneading the dough, fermenting the dough, rolling and shaping the dough, baking, cooling, packaging and storage, while at the stage of kneading the dough, premium wheat flour is mixed with dietary fiber powder obtained from the carpels of green peas. Moreover, dietary fiber powder from green pea carpels is used in an amount of 1.1-2.2% by weight of wheat flour.
EFFECT: obtaining a finished product with a high content of dietary fiber.
