FIELD: food industry; confectionery industry.
SUBSTANCE: method of production of crackers using Elevit wheat germ flour includes calcining almond kernels, sorting and slicing raisins, whole-grain prunes and whole-grain dried apricots. After which eggs 1c are beaten with honey, vanillin, grated orange zest in a water bath until creamy and the bowl is completely cooled to obtain an egg mixture. Then whole grain flour and premium wheat flour are mixed with Elevit wheat germ flour, ground cinnamon and baking powder to obtain a flour mixture, the flour mixture is added to the egg mixture along with raisins, non-prepared prunes, non-prepared dried apricots and almond kernels, the dough is shaped into ropes, leveled, brushed with egg, baked for 20 minutes at t=180–200°C, cooled to t=25–27°C, cut into 1.5 cm slices, placed on a baking sheet and baked again for 20 minutes at t=120°C. The starting components are taken in a certain mass ratio.
EFFECT: invention is aimed at improving the quality of products, intensifying the process of preparing flour confectionery products, increasing nutritional and biological value, and imparting preventive properties to finished products.
