FIELD: alcohol industry.

SUBSTANCE: method for producing alcohol from grain raw materials involves microwave processing of grain raw materials, for which rye, or wheat, or triticale is used, in a flow with a frequency of 2,450 MHz with heating it to a temperature of 60-70°C, followed by mixing with water at a temperature of 10-12°C in a storage bin to a moisture level of 28-30% and draining the water into the mixer, subjecting the moistened grain raw material to grinding to a grinding degree of 90-95%, mixing the crushed grain raw material with water in the mixer at a hydromodulus of 1:3.0…4.5, heating to a temperature of 90°C and holding for 15 minutes, cooling, adding glucavamorin, saccharifying under vacuum cooling, adding yeast in an amount of 10% of the wort volume, fermentation for 48-60 hours and distillation.

EFFECT: proposed method does not require the use of enzyme preparations used at the stage of pre-processing of raw materials, and also allows you to speed up the fermentation process from 72 to 48-60 hours.
