FIELD: alcoholic industry.
SUBSTANCE: method is realized by the following manner. Grains with moisture 12.0-16.% is subjected for IR-treatment at density of in rays current E = 16-18 kW/m2 for 40-50 s. Then treated grains are milled by a single scheme crushing by using hammer crusher or rolling machine. The milling degree is characterized by 95-100% passing through a sieve with d = 1 mm. Then grist is mixed with water at hydromodulus = (1:3.5)-(1:4.0) at temperature providing the final value in the mixture after addition of enzyme preparations 56-58°C. Enzyme preparations with a fluidizing effect are used in the amount 1.5-2.0 U AC per 1 g of arbitrary starch raw, with a saccharifying effect - 5.5-6,5 U GaA per 1 g of arbitrary starch raw, and with a proteolytic effect - 0.01-0.02 U PC per 1 g of protein raw. Duration of treatment of the mixture at temperature 56-58°C is 3-4 h. The prepared saccharified must is cooled, yeast is added and fermented for 40-48 h followed distillation of mash to obtain ethyl alcohol. Invention provides simplifying the technological process, to enhance the yield of alcohol and to reduce its cost.
