SUBSTANCE: invention relates to the production of minced sausage products, and can be used for the production of sausages made in an edible casing with a decorative image, intended for direct consumption. The following is proposed: a method of manufacturing a sausage product in the form of sausages which contains the stages of preparing raw meat from beef and pork with subsequent grinding, preparing auxiliary raw materials in the form of spices, adding spices to the chopped meat with exposure for 40 hours at a temperature of 2°C, cutting to obtain minced meat, forming sausage bars by filling the natural edible casing with minced meat, settling for 2 hours and heat treatment in a vertically suspended state by frying for 35 minutes at a temperature of 800°C followed by cooking for 10 minutes at a temperature of 75°C, and further cooling the sausage product to a temperature from 0°C to 1°C, and after cooling, the last additional stage is carried out by applying a decorative image to a cooled sausage product by direct printing with natural food inks using a food printer, which is carried out at a temperature of 0°C to 20°C, followed by drying the sausage product, with a decorative image applied, for 60 minutes.

EFFECT: invention provides for the expansion of the arsenal of methods of producing a sausage product in the form of sausages, namely a sausage product with a bright decoration, as well as the industrial production of a sausage product with a bright decoration, of high quality and safe for direct consumption, produced by this method.
