FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to production of cooked sausage products, and is intended for use at meat processing enterprises. Proposed is a functional purpose cooked sausage product containing turkey meat, egg melange, food salt, nutmeg, drinking water, which additionally contains oat flakes, maize maltodextrin, calcium-active citrate, iodine-active, black pepper, cinnamon, and as turkey meat contains turkey fillet with skin, with the following ratio of initial components, pts. wt.: turkey fillet with skin 100.0; oat flakes 3.5; drinking water 21.0; egg melange 1.0; maize maltodextrin 0.9; active calcium citrate 1.4; iodine-active 0.12; food salt 1.9; black pepper 0.08; nutmeg 0.05; cinnamon 0.05.
EFFECT: invention ensures enhancement of nutritive and biological value of the product, as well as expansion of the range of meat products and increase of the ready product yield.
