FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to production of cooked sausage products and is intended for use at meat-processing enterprises. Proposed is a functional purpose cooked sausage product containing turkey meat, egg melange, dry defatted milk, food salt, nutmeg, drinking water, which additionally contains natural soluble chicory, maize maltodextrin, iodine-active, black pepper, and as turkey meat contains turkey fillet with skin, with the following ratio of initial components, pts. wt.: turkey fillet with skin 100.0; natural soluble chicory 3.5; drinking water 22.0; egg melange 1.3; dry defatted milk 2.0; maize maltodextrin 0.95; iodine-active 0.12; food salt 2.0; black pepper 0.08; nutmeg 0.05.
EFFECT: invention ensures enhancement of nutritive and biological value of the product, as well as expansion of the range of meat products and increase of the ready product yield.
