FIELD: food industry; confectionery industry.
SUBSTANCE: invention concerns a method of producing a fortified fruit and berry bar enriched with active forms of vitamins B6, B9, B12, which has a purpose of disease prevention. A method of producing a fortified fruit and berry bar includes grinding and mixing all components to a homogeneous mass, and at the mixing stage into a homogeneous mass containing dried apricot, dried apple, almond kernels, honey, flax seeds, dried cranberries, vanillin, cinnamon and cloves, active forms of vitamins B6, B9, B12 are introduced — pyridoxine hydrochloride, methylfolate, methylcobalamin. Next, boiled drinking water is added at a temperature of 20–30°C until the required moisture content of the finished mass is 17–25%. The finished bars are treated with ultraviolet light, and the fruit and berry mass is prepared with the following ratio of the original recipe components, wt.%: 24.0–26.0 of dried apricot, 22.0–24.0 of dried apple, 21.0–23.0 of almond kernels, 5.0–7.0 of honey, 6.0–8.0 of flax seeds, 7.5–8.5 of dried cranberries, 0.4–0.5 of vanillin, 4–4.5 of cinnamon, 3.9–4.5 of cloves, 0.012 of pyridoxine hydrochloride, 0.0023 of methylfolate, 0.00002 of methylcobalamin.
EFFECT: invention makes it possible to obtain a finished product for people with a predisposition to folate cycle disorders, as well as for replenishing the body with B vitamins.
