FIELD: food industry.
SUBSTANCE: proposed jelly candy contains amidated pectin mixed with sodium lactate, the total content of which is in the range of 2.80-2.92 wt.% with a ratio of 1:6. The jelly candy also contains a sweetener in an amount of 62-65 wt.%, an acidity regulator, a flavour-forming component in the form of freeze-dried berries in combination with a natural flavour of these berries at a ratio of 2:1 - 3.5:1, and water. Moreover, the jelly candy is made in the shape of an olive, 10-24 mm long and 4-9 mm in diameter, has a porous structure with a porosity of 3%, isolated pores are filled with carbon dioxide. The jelly candy has a specific gravity of less than 1 g/cm3. Liquorice powder is used as a sweetener. Sodium bicarbonate is used as an acidity regulator in an amount that provides alkaline activity in the pH range of 8.4-8.5, osmotic activity less than 140 mOsm/L of water. Drinking water is used as water, containing carbon dioxide under 0.2 ATM overpressure conditions at +8°C.
EFFECT: easy swallowing of jelly candy without chewing, placing the product in the upper layers of the liquid contents of the stomach, the sensation of receiving sweetness, rapid appearance of a feeling of satiety, eliminating local irritation on the mucous membrane of the pyloric part of the stomach, reducing blood sugar levels while eliminating local irritation on the oral mucosa.
