FIELD: food industry.
SUBSTANCE: following is proposed: a method of preparing a fish product in the form of chilled culinary fish mince, which contains stages in which: fish raw materials are taken, while frozen minced fish is used as fish raw material; heating of 80% of the mass of raw materials until a temperature of -12° to -13°C; is reached; defrosting of 20% of the raw material mass until the temperature reaches -4° to -2°C; cutting the heated raw materials using a block cutter to obtain chips; grinding the defrosted raw material using a grinder; mixing the chopped heated raw materials and the crushed defrosted raw materials using a minced meat mixer until a homogeneous consistency and ripen the resulting minced meat in the refrigeration chamber; the minced meat is portioned by weight using a syringe dispenser with the minced meat being formed into cylindrical strips during portioning, which have a thickness of 4.5–10 mm and a length of 100–300 mm, and are packaged in a vacuum packaging installation using a food gas mixture, and the temperature of the fish product is from -2° to 0°C. A fish product is also proposed in the form of chilled culinary minced fish prepared in the specified method, wherein the fish product contains minced fish in the form of cylindrical strips that have a thickness of 4.5–10 mm and a length of 100–300 mm, and are vacuum packed using food gas mixture, and the temperature of the fish product is from -2° to 0°C.
EFFECT: invention improves the consumer properties of a fish product in the form of minced meat.
