SUBSTANCE: invention relates to a method of forming protein-polysaccharide films, which consists in adding the proteolytic enzyme trypsin and glycerine to sodium periodate-treated levan and forming protein-polysaccharide films, with the following ratio of components, wt.%: sodium periodate treated levan 54–56; proteolytic enzyme trypsin 39–41; glycerine 5–6.
EFFECT: formation of a protein-polysaccharide film.
