FIELD: food industry; meat industry.

SUBSTANCE: method for production of protein-fat emulsion, providing treatment of protein-fat emulsion enriched with antioxidants of natural origin in device for fine grinding cutter of soya protein isolate, vegetable oil, liquid component, characterized by that as a source of natural antioxidants used is vegetable raw material from crushed blueberry leaves, pouring them with 40% water-alcohol mixture at ratio of 1:8, obtained mixture is pre-extracted under microwave radiation with power of 700–800 W for 4–7 minutes to obtain 40% aqueous-alcoholic extract of blueberry leaves, obtained mixture is cooled to temperature of 10–25 °C, the liquid component used is a mixture of water in amount of 15% and a prepared solution of blueberry leaves in amount of 30%, taken from the total amount of the emulsion.

EFFECT: invention makes it possible to simplify and reduce duration of technological cycle.
